Avocado Hummus

I was looking for something fun to make and I found avocado hummus on Pinterest, and I had to make it. I got this recipe from a website called Cooking Classy. It was super yummy, however I was surprised it turned brown in the fridge. I thought the fresh lime juice would stop it from turning, but that was not the case. I recommend making this for a crowd so there aren’t any left overs, avoiding the browning issue in the fridge. It is really good with fresh veggies or crackers, especially my favorite gluten free crackers from Crunchmaster. This was my first time making my own hummus, and it is really fast and super easy!

Avocado Hummus

Great recipe for a party
Ingredients
  1. 1 18 oz can chick peas well drained
  2. 2 medium ripe avocados cored and peeled (13 oz before cored and peeled)
  3. 3 TBS olive oil more for serving if desired
  4. 1 1/2 TBS tahini normally found in the international food aisle
  5. 3 TBS fresh lime juice
  6. 1 clove garlic peeled
  7. salt & freshly ground black pepper to taste
  8. 1/8 tsp cumin
  9. 1-2 TBS fresh cilantro leaves finely chopped for topping
  10. red pepper flakes to taste (for topping)

Instructions
  1. Pulse chick peas, olive oil, tahini, lime juice, and garlic in a food processor until smooth. About 2 minutes. Season with salt and pepper to taste (cooking classy did a scant 1/2 tsp salt and about 1/8 tsp pepper), add cumin and avocados and pulse mixture until smooth and creamy, about 1-2 minutes longer
  2. Serve topped with more olive oil if desired and sprinkle with cilantro and red pepper flakes. Serve with fresh veggies, pita chips, tortilla chips or some gluten free crackers.
